The Properties tab for filters is so incredibly rich, that we try to only show what is commonly used. What you are looking for is an “advanced” feature. Click on the little gear, on the Properties tab of the Gradient of Unstructured filter.
Is it possible your ParaView-bin already existed as a build directory for another source checkout? If so, you need to clear the build directory (as in rm -rf ./*) before running cmake there again with a different source directory. – heinrichj Feb 21 '14 at 15:53
